Benefits of Wild Fish:
Choosing wild-caught fish over farmed fish can offer several benefits. Wild fish generally have a higher omega-3 fatty acid content, are typically lower in contaminants, and contribute to the preservation of wild fisheries. Opting for sustainably sourced and wild-caught fish supports the health of our oceans and ecosystems.

Instructions:

1. Preheat the oven to 400°F (200°C).

2. Season the halibut or grouper fillets with sea salt and pepper on both sides.

3. Heat a drizzle of organic avocado oil in an oven-safe skillet over medium-high heat. Once the oil is hot, add the seasoned fish fillets to the skillet.

4. Sear the fish for about 2-3 minutes on each side until it develops a golden crust.

5. Transfer the skillet to the preheated oven and bake for an additional 6-8 minutes, or until the fish is cooked through and flakes easily with a fork.

6. While the fish is baking, heat 2 tablespoons of avocado oil in a separate skillet over medium heat. Add the julienned rainbow carrots and sauté for about 4-5 minutes, or until they are slightly tender but still crisp.

7. Add the finely chopped garlic to the carrots and continue sautéing for another minute until fragrant.

8. Remove the carrots from the heat and toss them with the lemon zest and lemon juice.

9. Arrange a bed of arugula on individual serving plates or bowls.

10. Place a cooked fish fillet on top of the arugula bed.

11. Spoon the sautéed rainbow carrots with garlic over the fish.

12. Serve the rainbow carrot and white fish dish immediately.

Enjoy the beautiful combination of tender white fish, flavorful rainbow carrots, and the peppery kick of arugula. The quick sautéed rainbow carrots with garlic and lemon zest add brightness and crunch to the dish. Savor the benefits of choosing wild-caught fish, supporting sustainable fisheries, and enjoying a delicious and nutritious meal.
